I am trying to copy HD to another. I thought the partitions adjusted on the fly to fit. Am I missing an option here?

If the partitions don't fit, you might want to use the mouse to drag their sizes accordingly, until they fit the target. This is, of course, unless they are too big to begin with (i.e. contain more data than would fit on the target. In this case, you can opt to use 'dataselect' to discard some of the data while copying).
